  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup frozen spinach, thawed and drained
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup cream cheese
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon red pepper flakes (optional)

  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts to the skillet and cook until golden brown, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
  7. Add the thawed spinach and chopped artichoke hearts to the skillet and cook until heated through.
  8. Reduce the heat to low and add cream cheese, mayonnaise, Parmesan cheese, shredded mozzarella cheese, and red pepper flakes (if desired). Stir well until the cheeses are melted and the mixture is smooth.
  9. Return the chicken breasts to the skillet and spoon the spinach artichoke sauce over them.
  10. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce is bubbly and golden brown.
  11. Remove from the oven and let it rest for a few minutes before serving.
  12. Garnish with additional grated Parmesan cheese and red pepper flakes, if desired.
  13. Serve the keto spinach artichoke chicken with cauliflower rice or a side salad.
