Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth

Directions

  1. In the Instant Pot, select the sauté function and heat the oil. Add the ground beef and cook until browned.
  2. Add the onion, garlic, and bell pepper to the pot and sauté for 2-3 minutes until the vegetables are tender.
  3. Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, green chilies, chili powder, cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper.
  4. Pour in the beef broth and give everything a good stir to combine.
  5. Secure the lid on the Instant Pot and set the valve to the sealing position. Select the manual or pressure cook function and set the timer for 15 minutes on high pressure.
  6. Once the cooking time is up, allow the pressure to naturally release for 10 minutes, then carefully quick release any remaining pressure.
  7. Remove the lid and give the chili a stir. If desired, use a spoon to break up any large chunks of ground beef.
