Ingredients

  • 1 cup couscous
  • 1/2 cup kale, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup slivered almonds
  • 1/4 cup dried cranberries

Directions

  1. Bring 1 cup of water to a boil in a medium saucepan.
  2. Add the couscous, stirring to combine.
  3. Reduce the heat to low and cover the pan. Cook for 10 minutes.
  4. Meanwhile, heat the olive oil in a large skillet over medium heat.
  5. Add the garlic, kale, salt, black pepper, and red pepper flakes. Cook, stirring frequently, for 5 minutes.
  6. Stir in the cooked couscous and cook for 2 minutes more.
  7. Stir in the slivered almonds and dried cranberries.
  8. Serve hot.
