Ingredients

  • 1 cup dry brown beans
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups vegetable broth
  • 1/4 cup fresh parsley, chopped

Directions

  1. Rinse and sort the dry beans.
  2. Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook until fragrant, about 2 minutes.
  3. Add the chili powder, cumin, paprika, salt, and pepper and stir to combine.
  4. Add the vegetable broth and beans and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour, or until the beans are tender.
  5. Stir in the parsley and serve.
