Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1 (14.5 ounces) can chickpeas, drained and rinsed
  • 1/4 cup tomato paste
  • 1/4 cup water

Directions

  1. Heat the oil in a medium skillet over medium-high heat. Add the onion and garlic and sauté for 5 minutes, until the onion is softened.
  2. Add the curry powder, cumin, coriander, turmeric, and salt and cook for 1 minute, stirring constantly.
  3. Add the chickpeas, tomato paste, and water and stir to combine. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Serve over rice or with naan bread.
