Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 cups kale, chopped
- 2 cups spinach, chopped
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Directions
- Heat the oil in a large saucepan over medium-high heat.
- Add the onion and garlic and sauté for 2 minutes.
- Add the garam masala, coriander, and cumin and stir to combine.
- Add the kale and spinach and cook, stirring occasionally, for 5 minutes or until the vegetables are tender.
- Stir in the yogurt and cilantro and season with salt and pepper, to taste.
- Serve hot with naan or rice.
