Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 cups kale, chopped
  • 2 cups spinach, chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Directions

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and sauté for 2 minutes.
  3. Add the garam masala, coriander, and cumin and stir to combine.
  4. Add the kale and spinach and cook, stirring occasionally, for 5 minutes or until the vegetables are tender.
  5. Stir in the yogurt and cilantro and season with salt and pepper, to taste.
  6. Serve hot with naan or rice.
