Ingredients
- 1 lb flank steak, cut into cubes
- 1 ripe mango, peeled and diced
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp chili powder
- 1/4 cup honey
- 1 red bell pepper, diced
- 1 red onion, diced
- Wooden skewers, soaked in water
Directions
- In a blender, combine mango, soy sauce, garlic, ginger, chili powder, and honey. Blend until smooth.
- Place steak cubes in a shallow dish and pour half of the mango marinade over them. Marinate for at least 30 minutes.
- Thread marinated steak onto skewers, alternating with bell pepper and onion chunks.
- Preheat grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally and basting with remaining mango marinade.
