Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 cups water
- 4 large carrots, peeled and diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- Salt to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté for 3 minutes, or until the onions are translucent.
- Add the vegetable broth, water, carrots, and all of the spices. Stir to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the carrots are tender.
- Use an immersion blender to blend the soup until it is smooth.
- Taste and adjust seasoning if necessary.
- Serve hot.
