Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup small pasta (such as ditalini)
  • 1/2 cup freshly grated Parmesan cheese

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, celery, bell pepper, zucchini, oregano, basil, salt, and pepper. Cook, stirring often, until the vegetables are softened, about 5 minutes.
  2. Add the tomatoes, broth, beans, and pasta. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the pasta is cooked and the vegetables are tender, about 15 minutes.
