Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1/4 cup melted butter
  • 1/2 cup fresh fruit, chopped (optional)

Directions

  1. In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, beat together the eggs, buttermilk, and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. If desired, stir in the chopped fresh fruit.
  5. Heat a greased griddle or skillet over medium heat.
  6. Drop batter in 1/4 cupfuls onto the griddle or skillet and cook until golden brown on both sides, about 2 minutes per side.
  7. Serve with butter, syrup, and/or your favorite toppings.
