Ingredients

  • 2 cans black beans, drained and rinsed
  • 1/2 red onion, diced
  • 1/2 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the black beans, red onion, and bell pepper.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, chili powder, cayenne pepper, salt, and pepper.
  3. Pour the dressing over the black bean mixture and stir to combine.
  4. Chill for at least 2 hours before serving.
