Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1 (7-ounce) can crabmeat, drained and flaked
  • 1/4 cup dry white wine

Directions

  1. In a large soup pot, melt butter over medium heat. Add the flour and stir until smooth. Stir in the onion, celery, and carrots. Cook, stirring occasionally, for about 5 minutes.
  2. Stir in the chicken broth, salt, pepper, and garlic powder. Increase the heat to medium-high and bring the soup to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Stir in the cream and crabmeat and simmer for 5 minutes. Stir in the white wine and simmer for an additional 5 minutes.
  4. Serve hot.
