Ingredients

  • 1 package of sweet potato noodles
  • 1/2 cup of sesame oil
  • 1/2 cup of soy sauce
  • 2 tablespoons of brown sugar
  • 1 tablespoon of gochujang (Korean chili paste)
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of red pepper flakes
  • 1 cup of diced onion
  • 1 cup of sliced carrots
  • 1 cup of sliced mushrooms
  • 1 cup of sliced bell peppers
  • 1/2 cup of sliced zucchini
  • 1/2 cup of chopped green onions

Directions

  1. Bring a large pot of water to a boil.
  2. Add the sweet potato noodles and cook until al dente, about 4 minutes.
  3. Drain the noodles and rinse with cold water.
  4. In a small bowl, combine the sesame oil, soy sauce, brown sugar, gochujang, garlic powder, and red pepper flakes and mix together.
  5. In a large skillet, heat 1 tablespoon of oil over medium-high heat.
  6. Add the onion, carrots, mushrooms, bell peppers, and zucchini and cook until the vegetables are tender, about 8-10 minutes.
  7. Add the cooked noodles and the sauce and cook until the noodles are coated with the sauce, about 3 minutes.
  8. Stir in the green onions and cook for an additional minute.
  9. Serve warm.
