Ingredients
- 1 package of sweet potato noodles
- 1/2 cup of sesame oil
- 1/2 cup of soy sauce
- 2 tablespoons of brown sugar
- 1 tablespoon of gochujang (Korean chili paste)
- 1 teaspoon of garlic powder
- 1/2 teaspoon of red pepper flakes
- 1 cup of diced onion
- 1 cup of sliced carrots
- 1 cup of sliced mushrooms
- 1 cup of sliced bell peppers
- 1/2 cup of sliced zucchini
- 1/2 cup of chopped green onions
Directions
- Bring a large pot of water to a boil.
- Add the sweet potato noodles and cook until al dente, about 4 minutes.
- Drain the noodles and rinse with cold water.
- In a small bowl, combine the sesame oil, soy sauce, brown sugar, gochujang, garlic powder, and red pepper flakes and mix together.
- In a large skillet, heat 1 tablespoon of oil over medium-high heat.
- Add the onion, carrots, mushrooms, bell peppers, and zucchini and cook until the vegetables are tender, about 8-10 minutes.
- Add the cooked noodles and the sauce and cook until the noodles are coated with the sauce, about 3 minutes.
- Stir in the green onions and cook for an additional minute.
- Serve warm.
