Ingredients
- 1 pound crab meat
- 2 red bell peppers, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup half-and-half
Directions
- Heat the oil in a large soup pot over medium heat.
- Add the onion and bell pepper and cook until the vegetables are softened, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the broth, paprika, cumin, salt, black pepper, and cayenne pepper.
- Bring the soup to a boil, reduce the heat to low, and simmer for 20 minutes.
- Add the crab meat and half-and-half and simmer for 5 more minutes.
- Serve hot.
