Ingredients

  • 1 pound crab meat
  • 2 red bell peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup half-and-half

Directions

  1. Heat the oil in a large soup pot over medium heat.
  2. Add the onion and bell pepper and cook until the vegetables are softened, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the broth, paprika, cumin, salt, black pepper, and cayenne pepper.
  5. Bring the soup to a boil, reduce the heat to low, and simmer for 20 minutes.
  6. Add the crab meat and half-and-half and simmer for 5 more minutes.
  7. Serve hot.
