1 large eggplant, peeled and sliced into 1/4 inch thick slices
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
Directions
Preheat oven to 350 degrees F (175 degrees C).
Place eggplant slices in a single layer on a baking sheet.
In a small bowl, combine olive oil, garlic powder, oregano, basil, red pepper flakes, salt, and black pepper. Brush both sides of the eggplant slices with the mixture.
Bake in the preheated oven for 20 minutes, flipping the slices over halfway through.
Sprinkle Parmesan cheese on top of the slices, and bake for an additional 10 minutes, or until cheese is melted and lightly golden.
Serve hot.
