Ingredients
- 3 pounds boneless beef chuck roast
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon
- 1 teaspoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon Kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup beef broth
- 1 (7-ounce) can diced green chilies
- 2 tablespoons freshly squeezed lime juice
Directions
- Preheat oven to 325 degrees F.
- Heat olive oil in a large Dutch oven over medium-high heat.
- Season beef chuck roast generously with salt and pepper.
- Sear beef chuck roast on all sides until golden brown.
- Remove beef chuck roast from the Dutch oven and set aside.
- Reduce heat to medium and add onion and garlic to the Dutch oven.
- Cook for 3-4 minutes, stirring occasionally, until onion is translucent.
- Add cumin, oregano, coriander, cinnamon, chipotle chili powder, smoked paprika, salt and pepper.
- Stir to combine and cook for 1 minute, stirring constantly.
- Add beef broth, diced green chilies and lime juice.
- Return beef chuck roast to the Dutch oven and bring to a low simmer.
- Cover Dutch oven with a tight-fitting lid and transfer to preheated oven.
- Bake for 2 hours, or until beef chuck roast is fork-tender.
- Remove from oven, shred beef chuck roast with a fork and return to Dutch oven.
- Stir to combine and serve hot.
