Ingredients

  • 3 pounds boneless beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup beef broth
  • 1 (7-ounce) can diced green chilies
  • 2 tablespoons freshly squeezed lime juice

Directions

  1. Preheat oven to 325 degrees F.
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Season beef chuck roast generously with salt and pepper.
  4. Sear beef chuck roast on all sides until golden brown.
  5. Remove beef chuck roast from the Dutch oven and set aside.
  6. Reduce heat to medium and add onion and garlic to the Dutch oven.
  7. Cook for 3-4 minutes, stirring occasionally, until onion is translucent.
  8. Add cumin, oregano, coriander, cinnamon, chipotle chili powder, smoked paprika, salt and pepper.
  9. Stir to combine and cook for 1 minute, stirring constantly.
  10. Add beef broth, diced green chilies and lime juice.
  11. Return beef chuck roast to the Dutch oven and bring to a low simmer.
  12. Cover Dutch oven with a tight-fitting lid and transfer to preheated oven.
  13. Bake for 2 hours, or until beef chuck roast is fork-tender.
  14. Remove from oven, shred beef chuck roast with a fork and return to Dutch oven.
  15. Stir to combine and serve hot.
