Heat the olive oil in a large skillet over medium heat.
Whisk together the eggs and milk in a small bowl.
Pour the egg mixture into the skillet and season with salt and pepper.
As the egg mixture begins to set, use a spatula to gently move the edges of the omelette to the center, allowing the uncooked egg to flow to the outside of the skillet.
Once the egg mixture is mostly set, add any additional toppings to one side of the omelette (optional).
Carefully fold the omelette over and cook for an additional 2 minutes.
Slide the omelette onto a plate, cut in half, and serve.
