Ingredients
- 1 cup rolled oats
- 1/2 cup pitted dates
- 1/4 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup cocoa powder
- 2 tablespoons honey
- 1 teaspoon vanilla extract

- 2 tablespoons coconut oil
- Optional: 1/4 cup chopped dark chocolate
Directions
- In a food processor or blender, add the oats, dates, nuts, cocoa powder, honey, vanilla extract, and salt. Pulse until the ingredients are combined and the mixture is crumbly.
- Add the coconut oil and pulse until everything is combined and the mixture holds together when pressed.
- If using, add the chopped dark chocolate and pulse until combined.
- Scoop out the mixture and roll it into small balls.
- Store in an airtight container in the refrigerator for up to 1 week.
