In a medium bowl, whisk together egg yolks and sugar until combined.
In a small saucepan, heat cream, vanilla extract, and salt over medium heat until just beginning to simmer.
Remove from heat and slowly pour cream mixture into egg mixture while whisking constantly.
Divide mixture evenly among 6 ramekins. Place ramekins in a baking dish and fill baking dish with enough hot water to come halfway up the sides of the ramekins.
Bake for 45 minutes or until custards are just set.
Remove from oven and let cool for 15 minutes.
Chill in refrigerator for 1-2 hours.
Once custards are chilled, sprinkle 1 tablespoon of granulated sugar evenly over the top of each custard. Use a kitchen torch to caramelize the sugar until golden brown, or preheat the oven to broil and place custards on a baking sheet. Broil for 2-3 minutes or until the sugar is golden brown.
Serve immediately or chill until ready to serve.
