Ingredients
- 6 egg yolks
- 1 cup sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
Directions
- Preheat oven to 350°F (177°C).
- In a medium bowl, whisk together egg yolks and sugar until combined.
- In a small saucepan, heat cream, vanilla extract, and salt over medium heat until just beginning to simmer.
- Remove from heat and slowly pour cream mixture into egg mixture while whisking constantly.
- Divide mixture evenly among 6 ramekins. Place ramekins in a baking dish and fill baking dish with enough hot water to come halfway up the sides of the ramekins.
- Bake for 45 minutes or until custards are just set.
- Remove from oven and let cool for 15 minutes.
- Chill in refrigerator for 1-2 hours.
- Once custards are chilled, sprinkle 1 tablespoon of granulated sugar evenly over the top of each custard. Use a kitchen torch to caramelize the sugar until golden brown, or preheat the oven to broil and place custards on a baking sheet. Broil for 2-3 minutes or until the sugar is golden brown.
- Serve immediately or chill until ready to serve.
