Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 tablespoons (1 stick) unsalted butter, cold, cut into small cubes
  • 1 cup shredded Irish cheddar cheese
  • 1/4 cup chopped spring onions
  • 3/4 cup milk

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the cheese and spring onions.
  5. Make a well in the center and pour in the milk. Using a wooden spoon, stir just until the dough comes together.
  6. Turn the dough out onto a lightly floured surface and knead a few times until the dough is smooth.
  7. Roll out the dough to 1/2-inch thickness. Cut out 2-inch rounds with a biscuit cutter.
  8. Place the biscuits on a parchment-lined baking sheet. Bake for 12-15 minutes, until golden brown.
