Ingredients
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup butter
- 1/2 cup fresh cranberries
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
Directions
- Preheat oven to 425°F.
- In a medium bowl, whisk together flour and salt.
- In a separate bowl, whisk together eggs and milk until well blended.
- Add egg mixture to flour mixture and whisk until combined.
- Melt butter in a 9-inch cast iron skillet over medium-high heat. Once butter is melted, pour batter into the skillet and spread it out evenly.
- Sprinkle cranberries, sugar, and cinnamon over the top of the batter. Place skillet in preheated oven and bake for 20-25 minutes or until golden brown.
- Serve warm with a dollop of whipped cream or ice cream, if desired.
