Ingredients

  • 1/4 cup unsalted butter, softened
  • 1/4 cup sugar
  • 2 large eggs, lightly beaten
  • 1/2 cup almond flour
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Directions

  1. Preheat the oven to 350°F. Grease an 8-inch round cake pan and set aside.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. In a separate bowl, whisk together the almond flour, cream, vanilla and almond extracts, salt, and baking powder until combined.
  4. Pour the wet ingredients into the bowl with the butter and sugar and mix until just combined.
  5. Pour the batter into the prepared cake pan and spread evenly. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
