Ingredients
- 1 cup cooked lentils
- 1/2 cup cooked quinoa
- 1/4 cup almond meal
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon sea salt
- 1/4 cup vegan Parmesan cheese
Directions
- Preheat oven to 375° F (190° C).
- In a large bowl, combine cooked lentils, cooked quinoa, almond meal, garlic powder, onion powder, oregano, basil, black pepper, sea salt, and vegan Parmesan cheese. Mix well.
- Form the mixture into 12 evenly-sized meatballs.
- Place meatballs on a parchment-lined baking sheet and bake for 20 minutes, or until lightly browned.
- Serve with your favorite pasta and sauce.
