Ingredients

  • 1 cup cooked lentils
  • 1/2 cup cooked quinoa
  • 1/4 cup almond meal
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1/4 cup vegan Parmesan cheese

Directions

  1. Preheat oven to 375° F (190° C).
  2. In a large bowl, combine cooked lentils, cooked quinoa, almond meal, garlic powder, onion powder, oregano, basil, black pepper, sea salt, and vegan Parmesan cheese. Mix well.
  3. Form the mixture into 12 evenly-sized meatballs.
  4. Place meatballs on a parchment-lined baking sheet and bake for 20 minutes, or until lightly browned.
  5. Serve with your favorite pasta and sauce.
