2 large sweet potatoes, peeled and cut into 1-inch cubes
1/2 cup pineapple, diced
3 tablespoons butter
1/4 cup light brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup orange juice
1/4 cup honey
Directions
Preheat oven to 375°F. Grease a 9x13-inch baking dish.
In a large bowl, combine the sweet potatoes and pineapple.
In a small saucepan, melt the butter and stir in the sugar, cinnamon, and nutmeg. Pour the mixture over the sweet potatoes and pineapple and toss to coat.
Pour the mixture into the prepared baking dish.
Bake for 20 minutes, or until the sweet potatoes are tender.
In a small saucepan, combine the orange juice and honey. Bring to a simmer over medium heat and cook for 5 minutes, or until the mixture is thick and syrupy.
Pour the glaze over the sweet potatoes and pineapple and return to the oven for 5 minutes.
Serve warm.
