Ingredients
- 1 teaspoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 teaspoon jerk seasoning
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup diced pineapple
- 2 cups cooked chicken, diced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 3 cups cooked penne pasta
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the jerk seasoning, thyme, allspice, nutmeg, cinnamon, salt and pepper and cook for 1 minute.
- Add the pineapple, chicken, and chicken broth and cook until heated through, about 5 minutes.
- Stir in the cream and cook until heated through, about 3 minutes.
- Add the cooked pasta and stir to combine.
- Serve warm.
