Ingredients

  • 1/2 cup butter, melted
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 1/2 cup chopped walnuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. Mash the bananas in a separate bowl, then stir the mashed bananas into the creamed mixture.
  4. Stir in the walnuts. Combine the flour, baking soda and salt; stir into the banana mixture until just blended.
  5. Pour batter into prepared pan.
  6. Bake in preheated oven for 50 minutes, or until a toothpick inserted into center of the loaf comes out clean.
  7. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
