Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, diced
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cajun seasoning
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 pound lump crab meat
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Directions

  1. Melt the butter in a large pot over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.
  2. Stir in the flour and cajun seasoning, and cook for 1 minute.
  3. Gradually stir in the vegetable broth and heavy cream. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  4. Stir in the crab meat and parsley, and cook for 5 minutes.
  5. Season with salt and pepper, to taste.
  6. Serve hot.
