Ingredients
1 turkey frame
2 carrots, diced
2 celery stalks, diced
1 onion, diced
2 cloves of garlic, minced
4 cups of chicken broth
1 can of diced tomatoes
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of dried thyme
Salt and pepper to taste
Directions
In a large stock pot, heat a tablespoon of olive oil over medium-high heat.
Add the turkey frame and cook until it is lightly browned.
Add the carrots, celery, onion, and garlic and cook until the vegetables are softened, about 5 minutes.
Add the chicken broth, tomatoes, oregano, basil, thyme and season with salt and pepper.
Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes.
Remove the turkey frame from the soup and shred the meat with two forks.
Return the shredded turkey to the soup and simmer for an additional 10 minutes.
Serve hot with your favorite crusty bread.

Turkey frames are an excellent source of lean protein and minerals.
This soup is a great way to use up leftover turkey.
Adding a can of beans or some cooked pasta to this soup will make it even more filling.
