Ingredients
- 2 large beets, scrubbed and quartered
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons honey
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Place beets on a baking sheet lined with parchment paper. Drizzle with 2 tablespoons olive oil and season with salt and pepper. Roast in preheated oven for 30 minutes, or until beets are tender.
- In a small bowl, whisk together remaining olive oil, lemon juice, honey, mustard, salt, and pepper.
- In a large bowl, combine roasted beets, parsley, walnuts, and feta cheese. Pour dressing over salad and toss to combine.
- Serve immediately or chill in refrigerator for up to 2 days.
