Ingredients

  • 2 large beets, scrubbed and quartered
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons honey
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place beets on a baking sheet lined with parchment paper. Drizzle with 2 tablespoons olive oil and season with salt and pepper. Roast in preheated oven for 30 minutes, or until beets are tender.
  3. In a small bowl, whisk together remaining olive oil, lemon juice, honey, mustard, salt, and pepper.
  4. In a large bowl, combine roasted beets, parsley, walnuts, and feta cheese. Pour dressing over salad and toss to combine.
  5. Serve immediately or chill in refrigerator for up to 2 days.
