Ingredients
2 pounds sea bass, cut into 4-inch pieces
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 tablespoons capers
2 tablespoons olives, chopped
1 can tomatoes, diced
1 teaspoon oregano
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh cilantro, chopped (optional)
Directions
Preheat the oven to 350 degrees F.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the capers, olives, tomatoes, oregano, cumin, cayenne pepper, paprika, salt, and black pepper. Simmer for 10 minutes.
Add the sea bass to the skillet and spoon the sauce over the fish. Place in the oven and bake for 15-20 minutes, until the fish is cooked through.
Remove from the oven and top with fresh cilantro, if desired.
