Ingredients
- 2 lbs. ground venison
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 (14.5 oz.) can diced tomatoes
- 1 (15 oz.) can red kidney beans, drained and rinsed
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz.) can corn, drained and rinsed
- 1 cup beef broth
- Shredded cheddar cheese, for topping
- Sour cream, for topping
- Chopped green onions, for topping
Directions
- Set the Instant Pot to the sauté setting. Add the ground venison to the pot and cook until browned, about 5-7 minutes.
- Add the onion, garlic, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes, or until the onions are softened.
- Add the diced tomatoes, red kidney beans, black beans, corn, and beef broth. Stir to combine.
- Secure the lid and set the vent to the sealed position. Select the manual setting and set the timer for 10 minutes.
- When the timer is done, carefully release the pressure. Stir the chili and season with additional salt and pepper, if desired.
- Serve the chili with shredded cheddar cheese, sour cream, and chopped green onions.
