Ingredients

  • 2 lbs. ground venison
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (15 oz.) can red kidney beans, drained and rinsed
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can corn, drained and rinsed
  • 1 cup beef broth
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Chopped green onions, for topping

Directions

  1. Set the Instant Pot to the sauté setting. Add the ground venison to the pot and cook until browned, about 5-7 minutes.
  2. Add the onion, garlic, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes, or until the onions are softened.
  3. Add the diced tomatoes, red kidney beans, black beans, corn, and beef broth. Stir to combine.
  4. Secure the lid and set the vent to the sealed position. Select the manual setting and set the timer for 10 minutes.
  5. When the timer is done, carefully release the pressure. Stir the chili and season with additional salt and pepper, if desired.
  6. Serve the chili with shredded cheddar cheese, sour cream, and chopped green onions.
