Ingredients

  • 2 large carrots, peeled and chopped
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, finely chopped
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Directions

  1. In a medium bowl, add the carrots, olive oil, apple cider vinegar, honey, ginger, garlic, salt, black pepper, and cayenne pepper.
  2. Using an immersion blender, blend the mixture until it reaches a creamy and smooth consistency.
  3. Transfer the dressing to a jar or container, seal it and store it in the refrigerator.
