Ingredients

  • 2 cups heavy cream
  • 1/2 cup white chocolate chips
  • 1/3 cup granulated sugar
  • 4 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped macadamia nuts
  • 1/4 cup granulated sugar (for caramelizing)

Directions

  1. Preheat oven to 300°F.
  2. In a saucepan, heat the heavy cream until it just starts to boil. Remove from heat and stir in the white chocolate chips until completely melted.
  3. In a separate bowl, whisk together the sugar and egg yolks until well combined. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.

  5. Divide the mixture among 4 ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

  7. Remove ramekins from the water bath and refrigerate for at least 2 hours.
  8. Sprinkle a thin layer of granulated sugar on top of each custard and caramelize with a kitchen torch until golden brown and crispy.
