Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup brewed coffee, cooled
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Directions

  1. Preheat the oven to 350°F and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients.
  6. Stir in the coffee until just combined, then divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
  9. While the cakes are cooling, prepare the coconut-pecan frosting by combining the coconut, pecans, sugar, butter, and evaporated milk in a saucepan over medium heat.
  10. Cook, stirring constantly, until the mixture thickens, about 10 minutes. Remove from heat and let cool to room temperature.
  11. To assemble the cake, place one layer on a serving plate and spread frosting evenly over the top. Repeat with the second layer.
  12. Serve slices of the Willard Family German Chocolate Cake and enjoy!
