Ingredients

  • 1 1/2 cups finely crushed graham crackers
  • 1/2 cup chopped pecans
  • 1/4 cup melted butter
  • 32 oz cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup chopped pecans for topping
  • 1/2 cup caramel sauce for topping

Directions

  1. Preheat oven to 325°F. In a bowl, mix graham cracker crumbs, chopped pecans, and melted butter. Press mixture onto the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
  3. Pour cream cheese mixture over the crust in the pan. Bake for 55-60 minutes or until the center is almost set.
  4. Cool on a wire rack for 10 minutes. Loosen the sides of the pan and cool for an additional hour. Refrigerate overnight.
