Ingredients
1 head of cauliflower, cut into florets
2 tablespoons of olive oil
1 onion, diced
2 cloves of garlic, minced
1 tablespoon of fresh ginger, grated
2 teaspoons of curry powder
1 teaspoon of garam masala
1/2 teaspoon of cumin
1/2 teaspoon of turmeric
1/2 teaspoon of chili powder

Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook for 3-4 minutes, or until the onion is softened.
Add the ginger, curry powder, garam masala, cumin, turmeric, chili powder and salt and stir to combine.
Add the cauliflower and stir to coat with the spices.
Pour the coconut milk and water into the skillet and bring to a simmer.
Reduce the heat to low, cover the skillet and simmer for 15-20 minutes, or until the cauliflower is tender.
Remove the skillet from the heat and stir in the cilantro.
Serve the curry over rice or with naan.
