Indian Dahl with Spinach

Ingredients

  • 1/2 cup of split yellow peas (chana dal)
  • 1 tablespoon of canola oil
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of garam masala
  • 1/4 teaspoon of cayenne pepper (optional)
  • 1/2 teaspoon of salt
  • 2 cups of water
  • 2 cups of spinach, roughly chopped

Directions

  1. Soak the split peas in cold water for at least 30 minutes.
  2. Heat the canola oil in a medium-sized pot over medium heat. Add the cumin seeds and cook for about 30 seconds, until fragrant.
  3. Add the coriander powder, turmeric powder, garam masala, cayenne pepper, and salt. Stir to combine.
  4. Add the split peas and water. Bring to a boil, reduce the heat to low, cover, and cook for about 15 minutes, stirring occasionally, until the split peas are tender.
  5. Add the spinach and stir to combine. Cover and cook for another 5 minutes, until the spinach is wilted.
  6. Serve over rice or with naan.
