Ingredients

  • 3 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • 2 tablespoons garam masala
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground nutmeg
  • 3/4 teaspoon salt
  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt, stirred
  • 1/2 cup canned coconut milk
  • 3 tablespoons fresh cilantro, chopped

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook, stirring occasionally, for 2 minutes.
  3. Add the ginger, garam masala, cayenne pepper, turmeric, cumin, coriander, cardamom, cinnamon, black pepper, nutmeg, and salt. Cook, stirring occasionally, for 1 minute.
  4. Add the chicken and cook, stirring occasionally, for 8 minutes, or until the chicken is cooked through.
  5. Stir in the yogurt and coconut milk, reduce the heat to low, and simmer for 15 minutes, stirring occasionally.
  6. Stir in the cilantro and serve.
