Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup of white vinegar
  • 2 tablespoons of sugar
  • 2 tablespoons of salt
  • 1 tablespoon of red pepper flakes
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of ground cumin
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground turmeric
  • 1/4 teaspoon of ground coriander

Directions

  1. In a medium bowl, combine the vinegar, sugar, salt, red pepper flakes, black pepper, cumin, garlic powder, chili powder, smoked paprika, ginger, turmeric, and coriander. Whisk together until the sugar and salt dissolve.
  2. In a large pot, bring 4 cups of water to a boil over high heat.
  3. Add the cauliflower to the boiling water, reduce the heat to medium-low, and simmer for 3 minutes. Drain the cauliflower and set aside.
  4. In a large glass jar, layer the cauliflower and the pickling mixture. Secure the lid and shake the jar until the pickling mixture is evenly distributed.
  5. Let the jar cool to room temperature before placing in the refrigerator for 24 hours.
