Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 pounds beef stew meat, cubed
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried marjoram
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 1/4 cup sour cream

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the beef and cook until browned. Stir in the paprika, caraway seeds, marjoram, salt, and pepper.
  3. Add the beef broth and tomato paste and stir to combine. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  4. Add the carrots and potatoes and cook for 10-15 minutes, or until the vegetables are softened.
  5. Stir in the sour cream and simmer for an additional 5 minutes.
  6. Serve hot with a side of crusty bread.
