Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 pounds beef stew meat, cubed
- 2 tablespoons sweet paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried marjoram
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
- 1/4 cup sour cream
Directions
- Heat the oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the beef and cook until browned. Stir in the paprika, caraway seeds, marjoram, salt, and pepper.
- Add the beef broth and tomato paste and stir to combine. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Add the carrots and potatoes and cook for 10-15 minutes, or until the vegetables are softened.
- Stir in the sour cream and simmer for an additional 5 minutes.
- Serve hot with a side of crusty bread.
