Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chorizo, crumbled
  • 1/2 cup black beans, drained and rinsed
  • 4 eggs
  • 4 small corn tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/4 cup diced tomato
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1 avocado, sliced

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook, stirring occasionally, until cooked through, 5 to 7 minutes.
  2. Add the black beans and cook, stirring, until heated through, about 3 minutes.
  3. Crack the eggs into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through, about 5 minutes.
  4. Meanwhile, heat a separate large skillet over medium heat. Add the corn tortillas and cook until lightly browned and crisp, about 2 minutes per side.
  5. Divide the eggs and chorizo mixture among the tortillas and top with the cheese, red onion, tomato, cilantro, salsa, sour cream, and avocado.
  6. Serve immediately.
