Ingredients

  • 1 cup unsweetened coconut flakes
  • 2 cups vegan yogurt (any flavor)
  • 1/2 cup vegan granola
  • 1 cup fresh fruit (blueberries, strawberries, oranges, etc.)
  • 2 tablespoons maple syrup or agave nectar (optional)

Directions

  1. In a medium bowl, combine the coconut flakes, vegan yogurt, and granola. Mix until combined.
  2. Add the fresh fruit to the mixture and stir until combined.
  3. If desired, add a tablespoon of maple syrup or agave nectar.
  4. Pour the mixture into a 9x13 inch baking dish, cover with aluminum foil, and place in the refrigerator for at least 30 minutes.
  5. Remove the dish from the refrigerator and let sit for 10 minutes before serving.
