Ingredients
- 1 pound ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 1 (14.5 oz) can low-sodium chicken broth
- 1/4 cup all-purpose flour
- 1 teaspoon dried thyme
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup shredded cheddar cheese
- 1/2 cup bread crumbs
- Salt and pepper, to taste
Directions
- Preheat the oven to 375°F.
- In a large skillet over medium heat, melt the butter with the olive oil. Add the onion, garlic, and mixed vegetables. Sauté until the vegetables are tender, about 5 minutes.
- Add the ground turkey and cook until no pink remains. Season with salt and pepper.
- Add the flour and thyme, stirring to combine. Cook for 2 minutes.
- Pour in the chicken broth and bring to a simmer. Cook for 5 minutes.
- Transfer the mixture to an 8x8-inch baking dish. Sprinkle the top with cheddar cheese and bread crumbs.
- Bake for 25-30 minutes, or until the top is golden brown and the cheese is melted.
