Ingredients

  • 1 pound ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup bread crumbs
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, melt the butter with the olive oil. Add the onion, garlic, and mixed vegetables. Sauté until the vegetables are tender, about 5 minutes.
  3. Add the ground turkey and cook until no pink remains. Season with salt and pepper.
  4. Add the flour and thyme, stirring to combine. Cook for 2 minutes.
  5. Pour in the chicken broth and bring to a simmer. Cook for 5 minutes.
  6. Transfer the mixture to an 8x8-inch baking dish. Sprinkle the top with cheddar cheese and bread crumbs.
