Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons fresh coriander, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • 2 cups baby spinach, chopped
  • 4 skinless, boneless chicken breasts

Directions

  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, combine the olive oil, garlic, onion, coriander, cumin, paprika, oregano, salt, pepper, and lemon juice. Stir to combine.
  3. Add the spinach to the bowl and mix to combine.
  4. Place the chicken breasts in a baking dish and pour the spinach mixture over the chicken. Make sure the chicken is evenly coated.
  5. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the juices run clear.
  6. Serve hot over a bed of cooked quinoa or rice.
