Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons fresh coriander, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons fresh lemon juice
- 2 cups baby spinach, chopped
- 4 skinless, boneless chicken breasts
Directions
- Preheat the oven to 350°F (180°C).
- In a large bowl, combine the olive oil, garlic, onion, coriander, cumin, paprika, oregano, salt, pepper, and lemon juice. Stir to combine.
- Add the spinach to the bowl and mix to combine.
- Place the chicken breasts in a baking dish and pour the spinach mixture over the chicken. Make sure the chicken is evenly coated.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the juices run clear.
- Serve hot over a bed of cooked quinoa or rice.
