Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1/2 teaspoon baking powder

Directions

  1. In a medium bowl, mash the bananas with a fork until most of the lumps are gone.
  2. Add the eggs and baking powder and mix until everything is combined.
  3. Heat a large skillet over medium heat and add a bit of butter or oil. Once the skillet is hot, drop about 1/4 cup of batter for each pancake.
  4. Cook for 3-4 minutes until the bottom of the pancake is golden brown. Flip the pancakes and cook for another 2-3 minutes until golden brown on both sides.
  5. Serve with butter, syrup, honey, or your favorite topping.
