Ingredients

  • 2 wild duck breasts, skin on
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon olive oil

Directions

  1. Rinse the duck breasts and pat them dry with a paper towel.
  2. In a small bowl, combine the salt, pepper, garlic powder, paprika, oregano, thyme, and rosemary. Mix them together and set aside.
  3. Rub the olive oil onto the duck breasts.
  4. Sprinkle the spice mixture over the duck breasts, making sure to cover them evenly.
  5. Heat a grill or grill pan to medium-high heat.
  6. Place the duck breasts on the grill and cook for 5 minutes per side, or until the internal temperature of the duck reaches 165°F (75°C).
  7. Remove the duck breasts from the heat and let them rest for 5 minutes before serving.
