- 2 wild duck breasts, skin on
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano

- 1 teaspoon olive oil
Directions
- Rinse the duck breasts and pat them dry with a paper towel.
- In a small bowl, combine the salt, pepper, garlic powder, paprika, oregano, thyme, and rosemary. Mix them together and set aside.
- Rub the olive oil onto the duck breasts.
- Sprinkle the spice mixture over the duck breasts, making sure to cover them evenly.
- Heat a grill or grill pan to medium-high heat.
- Place the duck breasts on the grill and cook for 5 minutes per side, or until the internal temperature of the duck reaches 165°F (75°C).
- Remove the duck breasts from the heat and let them rest for 5 minutes before serving.
