Ingredients
- 4 eggs, separated
- 1/2 cup sugar
- 1/2 cup cocoa powder
- 1/4 cup matzah cake meal
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
Directions
- Preheat oven to 350°F (175°C). Grease an 8-inch (20 cm) springform pan lightly and set aside.
- In a large bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar and continue to beat until stiff peaks form.
- In a separate bowl, beat the egg yolks with the electric mixer until light and fluffy. Gradually add the sugar and beat until thick and pale.
- Add the cocoa powder, matzah cake meal, vanilla extract, and salt to the egg yolk mixture and stir until combined.
- Gently fold the egg whites into the egg yolk mixture until combined.
- Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely before serving.
