Cut the peppers in half and remove the stems and seeds. Place the peppers cut side down on a baking sheet and bake for 15 minutes, or until the peppers are soft and lightly browned.
Remove the peppers from the oven and let cool. Peel off the skins and discard.
In a food processor, combine the peppers, garlic, cumin, paprika, coriander, salt, pepper, and cayenne pepper. Process until smooth.
Add the olive oil and process until the sauce is the desired consistency. Taste and adjust the seasoning if necessary.
Store in an airtight container in the refrigerator for up to 1 week.
