Ingredients

  • 1 package of unflavored gelatin
  • 1/2 cup of hot water
  • 1/2 cup of whipping cream
  • 1/4 cup of granulated sugar
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of salt
  • 1 1/2 cups of assorted fruit (strawberries, blueberries, kiwi, etc.)
  • 1/4 cup of freshly squeezed orange juice
  • 1/2 cup of chopped nuts (almonds, walnuts, etc.)

Directions

  1. In a medium bowl, mix together the gelatin, hot water, and 1/4 cup of the sugar until completely dissolved.
  2. In a separate bowl, whip the cream until soft peaks form. Add in the remaining sugar, vanilla, and salt, and mix until combined.
  3. Add the gelatin mixture to the whipped cream and mix until combined.
  4. In a separate bowl, mix together the assorted fruit, orange juice, and chopped nuts.
  5. In a 9x13 inch pan, spread half the cream mixture. Top with the fruit mixture.
  6. Spread the remaining cream mixture over the fruit mixture.
  7. Cover and refrigerate for 4 hours or overnight.
  8. Cut into squares and serve chilled.
