Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1/2 cup buttermilk
- 1 cup fresh blueberries
- 2 tablespoons lemon zest
- 2 tablespoons sugar (for topping)
Directions
- Preheat oven to 350°F. Grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla and lemon juice.
- Alternate adding the flour mixture and buttermilk to the large bowl, beginning and ending with the flour mixture.
- Gently fold in the blueberries and lemon zest.
- Pour the batter into the prepared loaf pan. Sprinkle the top with the 2 tablespoons of sugar.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
