Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 1 cup fresh blueberries
  • 2 tablespoons lemon zest
  • 2 tablespoons sugar (for topping)

Directions

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla and lemon juice.
  4. Alternate adding the flour mixture and buttermilk to the large bowl, beginning and ending with the flour mixture.
  5. Gently fold in the blueberries and lemon zest.
  6. Pour the batter into the prepared loaf pan. Sprinkle the top with the 2 tablespoons of sugar.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
